Huevos Rancheros

Although this recipe has a lot of different steps and is time consuming - it's worth it! Plus, you can prepare some of the ingredients a day or two before. This recipe serves six.

Caramelized Onions & Peppers

Ingredients:

  • 3 large onions (red, yellow, & white)
  • 1 poblano chili
  • 1 green bell pepper
  • 2 sweet peppers (yellow & red)
  • 1 jalapeno chili - including seeds
  • 1 tablespoon Provence herbs
  • 2 tablespoons balsamic vinegar
  • salt & pepper to taste
  • olive oil for cooking

Slice the peppers and onions into 1/4 inch slices. Saute in enough olive oil to coat the ingredients. Add Provence herbs, balsamic vinegar, salt and pepper to taste. Cook slowly over medium heat until onions and peppers are soft and golden brown. The longer they cook, the richer the flavor.

 Ingredients:

  • 1 pound pork sausage
  • 1 poblano chili, finely diced
  • 1 small red onion, finely diced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chipotle chili powder
  • 1 ounce triple sec liqueur
  • 1 ounce fresh (not bottled) lime juice
  • 2 ounces tequila
  • salt & pepper to taste

Brown ground pork with the chili, onion and spices. Drain any excess grease. Add the triple sec, lime juice and tequila.

Ingredients:

  • 1 poblano chili, finely diced
  • 1 small red onion, finely diced
  • 2 cloves minced garlic
  • 2 cans black beans
  • 2 cans pinto beans
  • 1 ounce fresh lime juice
  • 1/2 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 cup fresh cilantro, roughly chopped
  • salt & pepper to taste

Saute chili, onion and garlic in olive oil until soft & translucent. Add beans & spices. Cook until the beans are soft and most of the liquid has evaporated. Smash beans with potato masher. Add lime juice, cilantro, salt and pepper.

Final Ingredients Needed:

  • 12 eggs
  • 12 six inch corn tortillas
  • 1/2 cup each shredded cheddar, jack, and queso cheeses
  • 1 cup sour cream
  • fresh salsa (homemade is best)
  • vegetable or olive oil for cooking the tortillas

Briefly saute corn tortillas (2 per person). Spread re fried beans on tortillas. Top with caramelized onions & peppers. Then add cheeses. Next top with margarita sausage. Cook 2 eggs over easy in olive oil and place on top of sausage. Cover eggs with homemade salsa and sour cream.
